It all started when my mother brought home a cake pan for me after they went shopping. I have been trying to figure out what to do with it since I got it. That day I found the inspiration! So last weekend I did it. I baked my second unicorn cake.

It was amazing. I had never heard of unicorn cake until this week. But after a lot of research on cake blogs and Pinterest, it seemed to be all the rage right now.
I cannot tell you the number of unicorn cakes I have found on Pinterest. What was the crazy thing? Unicorn cakes used to be only for fairies. Then suddenly one-day unicorn cakes were everywhere, so much so that people were making them for all sorts of holidays.
I think that fairies are good. But I am not sure that they need a unicorn cake for their birthday celebration. Not sure how that might mess up their dreams of being a unicorn. But maybe unicorn cakes can be made for every occasion? Like when your mommy brings home a cake pan and says that it is for you?
I do not know, maybe someone has the answer?

This is what I did for my first cake. And it is amazing. But here is what you do.
Get a cake pan and fill it with your favorite cake batter. I used a chocolate cake mix with strawberry swirl frosting. Cut the tops off of your chocolate cupcakes. Then top them with strawberry cake. I used rainbow cake frosting and a chunk of rainbow candy for decoration.
My cake pan said that it was a small unicorn cake. But honestly, it was just a regular-sized cake. I would recommend at least doubling the frosting to give it that full picture of a unicorn. And use more chocolate frosting. The mixture of the white and dark chocolate in my frosting was not enough.

To make the cake itself, I used the same pan as I did for my cupcakes. Put the batter in the cake pan. And bake according to the directions. Bake for 15 minutes and then stick it in the freezer.
The frosting is not really that complicated to make. I just blended the cupcake batter with the frosting ingredients. I used a stand-up mixer to mix it all up. Keep frosting and cake in the freezer for an hour.
And here it is.
Oh my goodness, so good. My mom also enjoyed it a lot. She did say that the cake was not super frosting. That it could be made frosting er and have a better texture. And I would not be upset. This unicorn cake was a smash hit.
